DOMAINE DE SAINT MAURICE
Owned by the Barsalou family since 1974, Domaine Saint Maurice is close to Fontfroide Abbey, in the heart of the Narbonnaise Regional Natural Park. This vineyard of 70 hectares extends to the edge of the pine woods, a few kilometres south of the village of Bizanet. The soils of the Fontfroide stream valley, made of ferruginous sandstone, slightly acid and rather fresh, give a slower ripening of the grapes compared to the other family estates. The winery, built in 1898, was enlarged a century later with the creation of an extension sheltering stainless steel tanks specialised for the elaboration of white and rosé wines.

Domaine de Saint Maurice
Made in the estate of Saint Maurice, the wine called La Rousèdo, "The Rose Garden" in Occitan, offers a floral and charming bouquet. This soft rosé with a great lingering flavour is elaborated by a blend of cinsault and grenache gris, two traditional Pays d'Oc grape varieties that are deeply rooted thre in a ferruginous sandstone soil. The gourmet freshness of this wine will match deliciously with Mediterranean cuisine and summer salads.

WINEMAKING
For both varieties, a slight skin maceration is practiced as well as a cold settling. The fermentation, regulated at 18 °C, lasts about twenty days.

TASTING
EYE : pale pink color with greige highlights.
NOSE : fruity and floral aromas.
MOUTH : fresh, round, apricot and hawthorn flavors with tangy notes.
